Farmhouse Seltzer with Passion Fruit, Botanicals, Lime Butterfly Pea Flowers & Honey
Phoebe is our newest “farmhouse seltzer.” This time, we’ve built the flavor profile around the Saturn, one of the few tiki cocktails featuring gin. The cocktail recipe is worth your time and is as follows:
1 1/2 ounces gin
1/2 ounce lime juice
1/2 ounce orgeat
1/4 ounce passion fruit purée
1/4 ounce Velvet Falernum
8 ounces crushed ice
Blend and serve, garnished with a lime twist wrapped around a cherry, secured with toothpick.
For our rendition, we took our farmhouse seltzer, fermented in wine barrels with our house cultures, and infused it with a blend of gin botanicals and fermented it on passion fruit purée. We then further infused small amounts of noyaux, clove, ginger and lime zest and hit the blend with a big dose of butterfly pea flowers to lend a bright violet color. This seltzer pours a stunning, iridescent color that ranges from deep blue to lavender, depending on the lighting. The nose is complex with the gin botanicals and passion fruit balancing each other perfectly, underpinned by an intoxicating aroma of noyaux that I just can’t get enough of.
Like any good tiki cocktail, Phoebe can be enjoyed at any moment you want to be transported to a nostalgic, if entirely imagined Polynesian paradise.
