A Mixed-Culture Farmhouse Ale
Tasting Notes: Honey, Chardonnay-like, creamy carbonation, warming alcohol, subtle oak, Medium/Low Acidity
Production Notes: An homage to the legendary Avec Les Bons Voeux from Brasserie Dupont. We brewed this beer with a higher starting gravity to give it weight and warmth, but fermented it entirely with our native house cultures for added complexity. It was aged 6 months in oak barrels and has been bottle-conditioned for nearly a year prior to release.
